Regular cook time : 25 minutes
TurboChef cook time: Pork – 6 mins, Squash – 3 mins
Ingredients:Pork
300g Trimmed Pork Loin
3 Slices Parma Ham (or similar)
50g Red Onion (finely chopped & cooked)
Salt & Pepper (to taste)
1 tbsp. Light Olive Oil
Ingredients:Butternut Squash
200g Butternut Squash, cut into wedges
½ tsp Ground Cumin
½ tsp Ground Coriander
¼ tsp Ground Ginger
½ tsp Ground Turmeric
½ tsp Ground Paprika
1 clove Garlic, finely chopped
1 fresh chilli, finely chopped (optional)
1 tbsp. Olive Oil
Salt & Pepper (to taste)
Instructions: Pork
- Brush the pork loin with oil and season to taste.
- Wrap the loin with the slices of Parma ham. Brush a little more oil on the out side surface of the ham.
- Place the wrapped pork on a metal baking sheet with a piece of non-stick baking parchment. Roast in your TurboChef oven for 6 minutes.
- Once cooked, leave the pork to rest somewhere warm while you cook your butternut squash.
Instructions: Butternut Squash
- Place the wedges of butternut squash in a suitably sized bowl. Add the olive oil and toss the squash so that it is evenly coated with the oil.
- Dust the ground spices, chilli and garlic over the squash and toss again so that the spices stick to the oil on the surface of the squash.
- Transfer the squash to a metal baking tray and roast in your TurboChef oven for 3 minutes or until soft and lightly golden.
To Serve
- Pile some of the roasted squash in the centre of a serving plate.
- With a sharp knife, slice the pork loin and arrange neatly on the plate with the squash.
- Garnish with a drizzle of good quality olive oil.
