Roast Pork Loin with Butternut Squash

TurboChef cook time: Pork – 6 mins, Squash – 3 mins

Ingredients:Pork

300g Trimmed Pork Loin
3 Slices Parma Ham (or similar)
50g Red Onion (finely chopped & cooked)
Salt & Pepper (to taste)
1 tbsp. Light Olive Oil

Ingredients:Butternut Squash

200g Butternut Squash, cut into wedges
½ tsp Ground Cumin
½ tsp Ground Coriander
¼ tsp Ground Ginger
½ tsp Ground Turmeric
½ tsp Ground Paprika
1 clove Garlic, finely chopped
1 fresh chilli, finely chopped (optional)
1 tbsp. Olive Oil
Salt & Pepper (to taste)

Instructions: Pork

  1. Brush the pork loin with oil and season to taste.
  2. Wrap the loin with the slices of Parma ham. Brush a little more oil on the out side surface of the ham.
  3. Place the wrapped pork on a metal baking sheet with a piece of non-stick baking parchment. Roast in your TurboChef oven for 6 minutes.
  4. Once cooked, leave the pork to rest somewhere warm while you cook your butternut squash.

Instructions: Butternut Squash

  1. Place the wedges of butternut squash in a suitably sized bowl. Add the olive oil and toss the squash so that it is evenly coated with the oil.
  2. Dust the ground spices, chilli and garlic over the squash and toss again so that the spices stick to the oil on the surface of the squash.
  3. Transfer the squash to a metal baking tray and roast in your TurboChef oven for 3 minutes or until soft and lightly golden.

To Serve

  1. Pile some of the roasted squash in the centre of a serving plate.
  2. With a sharp knife, slice the pork loin and arrange neatly on the plate with the squash.
  3. Garnish with a drizzle of good quality olive oil.
