Located in the heart of Somerset is the smallest City in England, Wells. With a population of approximately 11,000 people, you would be forgiven for thinking Wells was no more than a small village, but once you’ve set your eyes on its magnificent Cathedral, the status becomes impressively evident…
Throughout the maze of medieval streets there are numerous shops and cafes to entice you in but the one that stands out from the rest is BAR ITALIA.
Frank Ferrari, an English born gentleman whose parents are from southern Italy, founded and still operates the Bar Italia coffee shop & Gelateria.
We asked Frank what makes Bar Italia unique.
“Everything we do is as artisan based as possible, of course we serve the finest Italian coffee, everything is either made on site or using Italian products and ingredients”. We have a range of ten Gelato’s and Sorbets on display at any one time. But, I have up to 100 recipe’s which I interchange throughout the season to keep the locals interested”
Why did you come to Taylor UK?
“We have been trading for 14 years this year and when the shop first opened, I purchased Frigomat equipment. The Frigomat T5s Batch Freezer (equivalent to the Taylor C122) and a CH02 heater unit have worked perfectly, however after 14 years of use, our heater unit was beyond economical repair. I contacted our local Taylor agent, who we know and lives locally to us, was able to source and replaced the machine, like for like”.
Bar Italia retired their old heater for a new Taylor by Frigomat CH02 heater, which in essence is very similar to their old machine but with a few modifications to bring it up to date.
What is your experience of the new machine?
“The Frigomat CH02 is a very simple machine and easy to use so to be fair, I was not expecting anything to be different about the new one. However, there are a few extra temperature controls and preset programs which are very useful”.
The CH02 is an essential unit for all those operators without pasteurisers for the preparation of ice cream mixes starting from fresh ingredients, for the hot melting of powders, cocoa, oily pastes and much more. It is a precious tool for the preparation of culinary specialities requiring a gentle heating with continuous agitation. The dynamic glycol bain-marie system allows the temperature to be set at any point up to 90°C (194°F) for a gentle heating, without changing the organic characteristics of the products.

The particular shape of the dispenser allows the CH02 to be placed on top of the horizontal batch freezers in the Taylor by Frigomat range allowing the operator to pour hot mixes directly into the freezing barrel.
The IES electronic system eliminates the phenomenon of the thermal inertia, thanks to a patented system, which allows high working precision at the desired temperatures while reducing energy consumption.
Frank uses a counter top, horizontal batch freezer like the Taylor C122. This compact machine can produce one Napoli of finished ice cream or Gelato in one cycle which takes approximately 10 minutes. This is the perfect machine for small artisanal operators who make their products fresh and regularly.
