Recipe of the Month

Ingredients
- 2 Large Portobello Mushrooms
- 2 Rashers Bacon (pre-cooked)
- 50g Red Onion (finely chopped & cooked)
- Salt & Pepper (to taste)
- 1 tbsp. Sour Cream & Chive Dip
- 1 tbsp. Parmesan (finely grated)
- 1 tbsp. Cheddar Cheese (finely grated)
- Chopped Basil (to taste)
- 1 tbsp. Light Olive Oil
Instructions:
- Chop the cooked bacon in small pieces
- Combine the bacon, onion, cheeses and chive dip together in a bowl. Season with the salt and pepper to taste and add the basil
- Brush the mushrooms with the olive oil and season with salt and pepper
- Pile the bacon and onion mix into the ’cups’ of the mushrooms (smooth side down)
- Transfer the stuffed mushrooms to a small metal or Teflon baking tray and bake in the TurboChef on the Stuffed Mushroom setting for 1 minute 45 seconds
- Serve with a dressed salad garnish
