  • 2 Large Portobello Mushrooms
  • 2 Rashers Bacon (pre-cooked)
  • 50g Red Onion (finely chopped & cooked)
  • Salt & Pepper (to taste)
  • 1 tbsp. Sour Cream & Chive Dip
  • 1 tbsp. Parmesan (finely grated)
  • 1 tbsp. Cheddar Cheese (finely grated)
  • Chopped Basil (to taste)
  • 1 tbsp. Light Olive Oil


  1. Chop the cooked bacon in small pieces
  2. Combine the bacon, onion, cheeses and chive dip together in a bowl. Season with the salt and pepper to taste and add the basil
  3. Brush the mushrooms with the olive oil and season with salt and pepper
  4. Pile the bacon and onion mix into the ’cups’ of the mushrooms (smooth side down)
  5. Transfer the stuffed mushrooms to a small metal or Teflon baking tray and bake in the TurboChef on the Stuffed Mushroom setting for 1 minute 45 seconds
  6. Serve with a dressed salad garnish
